Cooking: Chili con Carne

So far I was too busy to talk about cooking. My intention was to release all my recipes in an XML format – but all formats I have found so far don’t match my taste, are not free or are no longer maintained.

However, it still needs some work, and some tools to use it (i.e. a PHP script to create recipes, or to view them). But I have no time, and my next vacation is in January :-/
Anyway, here’s a Chili con Carne recipe. It’s not original, it’s simple and easy to prepare, and it tastes good.

Chili Con Carne
- 2 TS of oil
- 1 red hot chili pepper
- 2 gloves of garlic
- 400 g ground meat (beaf or mixed beaf/pork)
- 1 can of kidney beans
- 1 can of corn
- 1 can of tomatoes, peeled and sliced
- 500 ml vegetable stock
- 2 TS of tomato puree
- salt
- pepper
- paprika (powder)
- tabasco (or hot chili sauce)
Mince the garlic and the chili pepper. Heat some oil in a pot. Fry garlic, pepper and the meat for a few minutes, and stir frequently.
Add tomatoes, tomatoe puree, kidney beans, corn and stock. Simmer for about two hours, but don’t forget to stir every 10 minutes. Add more stock if the chili gets too viscuous. Then season to taste using salt, pepper, sugar, paprika and tabasco.
Serve with a small scoop of “creme fraiche” and bread or Mexican tortilla chips.
